Make your child's lunchbox exciting and stop after-school meltdowns! These easy recipes help you get ahead, and your child can have fun helping you with the prep.

What better way to send children back to school after the last couple of months than with a few exciting additions in their lunchbox. Prepare lunch as a surprise – or turn the prep into an activity you can share together. It might help to prompt a conservation about the week ahead.  

1) Summery sundae to-go: a rainbow dessert

What you’ll need: sugar-free or natural yogurt, strawberries, raspberries, blueberries

What to do:

1. Remove the stems from the strawberries and finely chop all the berries.
2. Layer the berries with yogurt . If you’re using natural yogurt, add half a teaspoon of honey.

2). Chocolate dipped tangerine: love in a tupperware


What you’ll need: tangerine segments, chocolate

What to do:

1. Ask your child to break up the chocolate into squares and pop them in a microwavable bowl.
2. Melt the chocolate in the microwave in 10 second bursts.
3. Help them dip the segments in the chocolate and leave to cool and set.

3) Star shaped sandwiches: the envy of the playground

What you’ll need: wholemeal bread, turkey slices (optional), soft cheese, cucumber, lettuce

What to do:

1. Make up the sandwich by spreading soft cheese onto the slices of wholemeal bread. Add a layer of turkey (if using), a layer of sliced cucumber and two lettuce leaves on top. Press down firmly on the top of the sandwich.
2. Use a the biscuit cutter to shape the sandwiches.


4) Cheese quesadilla: take a break from sarnies

What you’ll need: 1 large white tortilla, 30g of lighter cheddar grated, red pepper (chopped small)

What to do:

1. Cut the wrap in half lengthways and top one half with cheese and red pepper. Put the other half of the tortilla over the top.
2. Heat the tortilla for 1 minute each side in a non-stick frying pan until lightly brown. Remove and let cool, then cut into 4 wedges.

5) Lunchbox pasta: a hug in a box

What you’ll need: wholemeal fusilli, , petit pois, a tin of chopped tomatoes, cheddar cheese and/or cooked chicken 

What to do:

1. Cook the pasta in boiling water.
2. Heat the chopped tomatoes through and add the peas.
3. Drain the pasta and mix with the sauce. Top with the chicken and/or a bit of grated cheese.
